crockpot freezer cooking

At the beginning of the year I decided that I truly needed to make a commitment to feed my family well.  Over the past fifteen plus months I have been flyinh by the seat of my pants.  Making something if I feel like it, eating leftovers or cereal for supper, getting take out or going out to eat.  This is problematic for two reasons.

First is that it is unhealthy.  Serving sizes are huge when you eat out.  There is a ton of butter, oil and salt added to so many things that is completely unnecessary.  And, cereal for supper?  I don't think a heaping bowl of Apple Jacks is considered a well-rounded dinner.  I have always made it a priority for the boys to eat well, but now they are really able to eat table food consistently.  They are no longer only surviving on black beans, sweet potatoes and homemade baby food!  So, if they are going to start eating what Jordan and I eat every night, it's going to have to be something other than cereal and japanese.

Secondly, it is super expensive to eat out or run in the grocery store every other night to grab just a few things and walk out with twelve impulse buys!  We try to convince ourselves that it's not expensive.  But, when you get right down to it, you can cook a nice meal for $6-7 for a family of four (we'll talk about that in a few minutes :)) or you spend at least $15 to eat (and that's fast food - it's more anywhere else)!  And see, I also mentioned family of four.  Because we have these two little monsters that inhale food!  Seriously, they eat more than I do some meals.  They are tiny but I'm telling you, they both have crazy appetites.  And, from what I hear, with two boys, it's only going to get worse! 

So, I've decided to get serious about having a plan.  I have actually kept this going for like three weeks, so that's a good start.  The theme of my life lately has been start something, get super pumped about it, and then fall off the bandwagon.  But, three weeks is a good start!  So, I've started choosing the meals I want to cook at the beginning of the week.  Putting all the recipes in the front of my recipe binder, buying the ingredients that I need for those recipes and then choosing each day which one I feel like making.  It gives me enough flexibility to stick with it.  Also, I found a bunch of new recipes which helps because I'm excited to try something new instead of cooking my same old things.  A ton of the recipes have been crockpot meals because I've realized that it may just be the key to my success for the next twenty years.  4:30/5:00 pm is a difficult time.  The boys are up from their nap, Jordan may call and say he's going to be a little late, the boys are under my feet as I try to pull something together and I get frustrated and it quickly becomes an equation for a difficult night.  So, now I cook supper at 9:30 am.  When the boys go down for their morning nap.  Then, I don't think anything else of it until 6 pm when it's go time.  It's fabulous.  I decided maybe I could take it one step further and look into crockpot freezer cooking.

With crockpot freezer cooking you throw all of your ingredients in a gallon ziplock bag (with instructions written on the bag) and freeze.  Then, you just dump the contents of the bag into the crockpot and bam, you're done.  I found my recipes here and here and convinced my girlfriends that they needed to do it too so that I could actually enjoy the process of making my bags.  So, on Tuesday night we got together and went to get our groceries.  Then, came back to The Taj and spent a few hours dealing with more raw chicken than we could have ever wanted to in our entire life.


We were able to make all of these meals!


And, get this, the total for my seven meals was $44.  So, $6.28 per meal for a family of four.  It's awesome.

The only catch?

If the meal isn't good.


We had the first one tonight and it was a total bust.  It was the honey rosemary chicken.  It will not be making the list for round two.  That's for sure!

But, at least we were quick on our feet and found a good backup plan.

i'm always looking for new desserts.

i typically try a new dessert recipe and then make it over and over again for every unrelated party/shindig that we go to for like a month.
then we get sick of it.

so i look for a new recipe.

if you are anything like that....look no further!


i found the dessert.

i don't think i'll ever get sick of these.


salted.carmel.toffee.cupcakes.

holy moly.
they are divine.
i mean, like for real.
we'll probably eat these in heaven.


german chocolate cupcakes.
with hot, salted caramel squeezed into the middle of each one when they come out of the oven.
then homemade frosting.
then health bar smashed up and sprinkled on top.
then hot, salted caramel drizzled over that.


they are amazing.

wfmw - magic.


have you ever heard of magic erasers?

until i got married, i had never heard of them.
fmil introduced them to me.

and whoa.

seriously, they will clean anything.

they are the best things ever.  
on our bathtub, on the sink, on the wall.
anywhere.

i didn't know about them for so long.
so i just wanted to share the love :)

strawberries.



you know strawberries are in season right now, right?




and you know that you can make strawberry freezer jam in like 30 minutes, right?


well....if you didn't, you do now.
and you should.

so if you're looking for a quick suzie-homemaker project for the weekend, here it is!




first buy a gallon of strawberries.

it's best to buy locally grown.
and fun to make a day of picking the strawberries too.
but if you don't have time, they typically have some that are already picked.
so you can just buy them.

rinse the berries and then cut off the tops of your strawberries and slice them in half.


then you smash them.
or, if you're lazy, just throw them in the food processor and chop them a few times.
you'll need two cups smashed.

[a gallon will give you more than enough - but of course you have to buy a gallon because you know you or someone will eat quite a few]

then you add 4 cups of sugar and mix.
yes, 4 cups.
just don't think about it.


allow that to sit for 10 minutes.

then [i forgot to take pics of this part] but you take your sure jell and add it along with 3/4 cup of water to a saucepan on high.  continuously stir the mix until it starts to boil.  then allow to boil for one minute while stirring.


pour this mixture into your strawberries and sugar.
stir continuously for three minutes.


then pour into your containers.
leave them sitting out for 24 hours.
then store in the freezer.

jam will last three weeks in the fridge or up to a year in the freezer!

i have desperately been wanting a clothesline.

but have you googled clotheslines lately?


ummm...expensive!


so i'm trying to get my dad to get one from a neighbor that doesn't use his.


but until then, worker man rigged up a clothesline on our screen porch.


i'm sure they neighbors are so thankful :)

You are not going to believe this, really....you're not.

Worker Man and I have been car shopping for about 3 months now. We've looked and talked and looked again. On Wednesday night we stopped by the dealership to talk to Uncle Ray (who's really not related to Worker Man but that's what everyone calls him...you know he has to be a good one if you choose for him to be an uncle :)

Anyways, we went in and talked to him about our options and what we were interested in. Again, for like the 3 millionth time. He mentioned that he could go ahead and get me a minivan. Well, you all know that that went over like a lead balloon. Come to find out Worker Man had mentioned my hate for minivans in an earlier conversation so Uncle Ray was just "jerkin' my chain".

When we got done talking, the dealership had already closed so it was just the three of us. We were on our way out when Worker Man stopped and turned the other direction. You know there are always a few cars inside the dealership that they have to display. Well, the one in the opposite direction was.....

you guessed it....

a minivan.

Well, I wasn't about to walk over there, since I'm a hater and all. So I just stood there with this look of disgust as he oohed and ahhed over it. Finally after asking me about four times to come just peek inside, I inch my way over slowly (in case it tried to bite or something).

I still had a look of disgust on my face. The gross sliding doors, the nasty hatch back/trunk thingy, the memories of being piled in a minivan....gross.

But then, upon further examination, the middle captain chairs swiveled around, a table set up so the middle seat and the back seat could play games or eat or whatever, the stow-away flat back-row, the track lighting along the top, the a/c adapter to plug in your computer or other electronics BUILT IN. The list could go on. But you get the picture.

Worker Man asked me to sit in the drivers seat. Not wanting to seem like a stubborn jerk to Uncle Ray, I slid in....

and then....

lo and behold...

...I became a lover.




I might be a minivan mom after all...

the new doo.

Worker Man and I have toyed with the idea of me cutting his hair but we've yet to get our courage up to actually do it...

....until last night.

We bought some clippers at Target and decided it would be worth a shot. Although it was extremely interesting, it didn't turn out so bad.

And here's my battle wound. It looks a lot better than it actually is. It started bleeding pretty bad but that's just the price we pay for beauty. Or something like that, right?

And no, by the way. My knuckle is not the size of an average person's knee cap. But, I do admit that it looks gianormous.

I think it'll get better the more I do it. It will definitely save us some money considering Worker Man typically pays more to get his hair cut than I pay to get mine done.

Another stupid banana.

A few days ago, I woke up around 6:30 am (when I didn't have to be up till like 8) to be super wifey and fix Worker Man a strawberry-banana smoothie. Apparently I thought it was a good idea to bring up the idea of us buying stuff to make these smoothies for him to take for breakfast. I didn't think through the fact that I would have to be the one up making it for him.

Well, the first morning after we got the ingredients, I woke up to fix this smoothie. The recipe called for a frozen banana so I had thrown the banana in the freezer the night before. The following morning, I grabbed the banana and started cutting it into chunks. Or should I say started attempting to cut it into chunks. On my first attempt with the knife, the banana slid out from under the pressure and shot across the room like a blow-dart. If Worker Man had been walking through the kitchen I would have probably had to rush him to the hospital to have it surgically removed from his thigh or face or something.

Needless to say, I had to recruit Worker Man and a massive butcher knife to handle the situation.

My advice?

Cut the banana into chunks and put it in a baggie in the freezer for the next morning.

The receipe?

Ingredients:

* 1 cup pineapple juice
* 2 frozen bananas
* 8 large frozen strawberries, slightly thawed

Preparation :

1. Slice frozen bananas into slices and place them in blender.
2. Add pineapple juice and strawberries and blend all ingredients until smooth.
3. Garnish with granola.

Makes 4 servings.

Super easy and super fabulous. Unless your husband is unable to take three ingredients and get 'er done.

And by the way, I've come to the conclusion that bananas don't like me.

I've been looking forward to BooMama's tour but it has taken me some time to get pictures of everything and find time during this busy season to blog...

Welcome to our home!

Here's the front door.
(We have to come up with a new system for next year, but right now there are all kinds of cords running so we can't actually go in this door....whoops!)


Instead, we'll go in through the side door.  
I love this wreath!  My mom bought it for me a few weeks ago.  It's made out of jingle bells so it's a good little holiday sound to hear as we come and go.

The presents are kinda all over the place.  Next year I plan to use all the same Christmas paper.  A couple of rolls from Costco and I should be good to go.  It makes it look better if everything matches...

My mom bought me Christmas trees to go on either side.  They match our living room perfectly! 

Mom gave me this little Christmas tree to put in the kitchen.  It's really cute.  
She has so much Christmas stuff and since we just got married, she let me borrow some of her Christmas stuff :) 
I bought my mom and FMIL a nativity scene when I was living in Peru last summer.  I don't have a nativity scene so mom sent the one I bought for her home with me.  I really wish I had bought one for myself but I wasn't planning on being married and wifey by this time....

yay for projects.

I am the kinda project gal that sees a cute craft and wants to try to make it myself.
But...it never turns out quiiiiiteee right.

I get an e-mail from Lowes Hardware weekly called creative ideas. There are a ton of ideas that they offer and one week, I got lucky. I found a project to make a nutcracker out of planters. Here's what it turned out looking like.

I actually did it AND it turned out right!!!


I plan to make some more with mini planters. I'll take pictures of the process and post them. It's super easy!
